1 lb ground meat (turkey or beef)
1 large onion, chopped
2 stalks celery, trimmed and sliced
2 cups water
1 can (28oz) crushed tomatoes
1 can (15 oz) diced tomatoes
2 cans kidney beans (1 light, 1 dark), rinsed and drained
2 tbsp minced garlic
1 jalapeno, chopped with seeds
2.5 tbsp chili powder
1 tsp paprika
1 tsp oregano
1 tsp red (cayenne) pepper
1 tsp cumin
1 tsp salt
1 tsp pepper

In the large chili pot, heat ~1-2 tbsp oil over medium heat. Brown ground meat. Drain fat (if desired). Add onion and celery, cook until tender. Pour water into pot, mix in tomatoes (crushed and diced), beans, and garlic. Add spices. Bring to a boil. Reduce heat to low and cover for at least 1 hour.
