Large, russet potatoes

Preheat oven to 450F. Wash potatoes, poke a few wholes, sprikle with salt, and individually wrap in aluminum foil. Place in preheated oven for ~1 hour, turning potatoes every 15 minutes or so. After an hour, check to see if they are done (soft inside, easily pierced with knife through the center). Cut each potato in half; using a spoon, carefully remove the potato from the skin and place it into the stand mixer. [If the potato isnt quite soft enough, toss it in the microwave for a minute or two]. Leave a little bit of potato in the skin to keep it from falling apart. Once all of the potato is in the stand mixer, add a small amount of cheese, butter, garlic powder, sour cream, salt and pepper. Amounts will vary to taste and depend on how many potatoes you used. Now, blend it up! Once it is smooth and creamy, scoop the potato back into each potato skin. Cover with shredded cheese and place back into the oven until the cheese has melted.
Coleslaw
You know the deal with this easy side. Want it simple as can be? Grab a bag of coleslaw and a bottle of Marie Callender's dressing (Poppyseed or Coleslaw) and you are set! For more color and crunch, make it all from the veggies themselves:
1 head of green cabbage
1 head of red cabbage

1 bag shredded carrots
Set the slicer on the food processor to the desired setting and send the cabbage on through!
1 cauliflower
1/4 cup olive oil
1 tbsp sliced garlic
2 tbsp lemon juice
1 tsp salt
1/2 tsp black pepper
Grated parmesan cheese
Chives
1 lb sweet potatoes, cut into similar sized chunks (with or without skin)
2 tbsp oil
1 tbsp brown sugar
1/2 tsp cinnamon
1/4 tsp salt
pinch black pepper
Preheat oven to 375F. Pour oil in a baking dish, heat in oven for ~5 min. Add potatoes and bake for 20 minutes, turning potatoes halfway through. Mix dry ingredients in a bowl. After 20 minutes, remove potatoes from oven, sprinkle with sugar mixture, stir, return to oven for ~10 minutes or until potatoes are tender. Stir as needed.
