Crock pot classics--MEAT!!!!

Pot Roast


1 (2lb) boneless chuck roast, trimmed
1/4 cup gluten-free soy sauce
2 cloves garlic, minced
1 cup beef broth
1 (0.35oz) package dried shiitake mushrooms
1 tablespoon cracked black pepper
3 tbsp tomato paste
2 medium onions, quartered
1 (16oz) package of carrots, cut in 2 in pieces
16 small, red potatoes
1 tbsp canola oil
1.5 tbsp gluten-free flour (or cornstarch)
3 tbsp water

Pulled Brisket Sandwiches


1 (3lb) brisket, trimmed
2 tbsp gluten-free flour (or cornstarch)
2 large onions, thinly sliced
1 tsp black pepper
1/4 tsp salt
1 (12oz) bottle chili sauce
2 tbsp brown sugar
1 tbsp horseradish
4 large garlic cloves, minced
Gluten-free buns

See page 22 in Essential Slow Cooker cookbook for instructions. 7-8 hours to cook.  I bet this would be goooood with some homemade coleslaw!



Pulled Jerk Pork Sandwiches

2.5 lb boneless pork shoulder
1 tbsp Jamaican jerk seasoning (dry)
1/4 tsp dried thyme
1 medium onion, chopped (~1/2 cup)
1 cup cola (soda)
2 cups BBQ sauce
Gluten-free sandwich buns or corn tortillas

See page 157 in Betty Crocker cookbook.  Takes ~ 11 hours to cook.


Beef stew


2 lbs beef stew meat
1/4 cup gluten-free flour (or cornstarch)
1 tsp Worcestershire sauce
1 onion, chopped
1.5 cups beef broth
3 potatoes, diced
4 carrots, sliced
1 stalk celery, chopped
1/2 tsp salt
1/2 tsp black pepper
1 clove garlic, minced
1 bay leaf
1 tsp paprika

Cooks for 10-12 hours on low or 4-6 hours on high.


Mexican Beef (for tacos)


1 (4lb) chuck roast
1.25 cups diced green chiles (canned)
1 large onion, chopped
1 tsp salt
1 tsp black pepper
2 tbsp olive oil
1 tsp chili powder
1 tsp red (cayenne) pepper
1 (5oz) bottle hot pepper sauce
1 tsp garlic powder

Corn tortillas
Cilantro
Chopped onion
Salsa
